Chef de Cuisine Nathan Guggenheimer became Chef de Cuisine of db Bistro Moderne in April 2010. The promotional appointment was a natural next step for Chef Guggenheimer, who served as Sous Chef for sister restaurants db Bistro Moderne and Lumière since their opening in December, 2008.
Nathan is from Pitt Meadows, British Columbia, and a graduate of the VCC Chef Training Program. Since graduating in 2002, he honed his culinary skills in France and abroad with renowned Chefs like Philip Howard of The Square in London, England.
Chef Guggenheimer returned to BC to the position of Sous Chef, and later Executive Chef at the prestigious West Coast Fishing Club, then ultimately to West restaurant to work with respected Chef David Hawksworth.
Since joining db Bistro Moderne and Lumière in 2008, Nathan worked intimately with Chef Daniel Boulud (in Vancouver and at DANIEL in New York City), Lumière Executive Chef Dale MacKay, former db Bistro Vancouver Executive Chef Stephane Istel, and db Bistro Moderne NY Chef de Cuisine Olivier Muller.
Chef Guggenheimer's culinary experience and unique ability to marry Pacific Northwest ingredients with classic French technique, combined with his trademark consistency and team spirit, make him the ideal candidate to command Chef Boulud's Vancouver bistro kitchen.
Look for Nathan weekday mornings as he shops from local farmers at the Trout Lake and Kitsilano markets on his way to work.
