Lamb Stew Recipe
Ingredients:
– 2 lbs Lamb Stew Meat
– Handful of Thyme Sprigs
– Salt and Pepper to Taste
– 2 Teaspoons Cumin
– 2 Tablespoons Butter
– 2 Garlic Cloves
– 2 Parsnips
– 4 Carrots
– 2 Potatoes
– 1/2 Onion
– 1 Cup Chopped Kale
– 4 Cups Vegetable Stock
– 1 Cups Water
– 1/2 Cup Water and 1/2 Cup Flour Mixture
Directions:
1. Heat dutch oven on medium, melt butter
2. Salt and pepper stew meat, toss with cumin
3. Add stew meat to dutch oven
4. Stir after 4-5 minutes, turn heat to medium low
5. Add minced garlic and thyme, brown meat
6. Chop vegetables, except for the kale
7. Add broth, water and vegetables, except for the kale
8. Simmer for 1 1/2 hours
9. Add chopped kale at last minute, wilt
10. Stir in water/flour mixture to thicken
